We have no fireplace here at all!
You see the problem is quite clear

Thank you Santa, here's our key-
the milk and cookies are on me!
Our Santa loves these Ricotta cheese cookies! I'm sharing the recipe just in case your Santa might like them too!
Ingredients
1/2 cup unsalted butter
1 cup granulated sugar
1 cup Ricotta cheese
1 egg
1 tsp vanilla
2 cups all purpose flour
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
Icing
1/2 cup cream cheese
1/4 cup unsalted butter
1 1/2 cups sugar
1/2 tsp vanilla
In large bowl beat butter with sugar until fluffy, beat in egg, ricotta cheese, and vanilla beating well after every addition.
In separate bowl whisk together flour, salt, baking soda and baking powder. Stir into ricotta mixture.
Drop by generous 1 Tbsp onto parchment paper lined baking sheets. Cookies should be about 2 inches apart. Bake at 350 degrees until bottoms are golden brown - about 12-14 minutes.
Icing
In bowl, beat cream cheese with butter and gradually add sugar beating until well mixed. Beat in vanilla. Ice cookies when they are cooled and decorate as desired.

Hi Vicki - I just read your girl getaway post -- loooks like so much fun! And your time again with the Gardener at the condo. So many wonderful shells. I can see why you would be collecting them all.
Just looking at those cookies is giving me a sugar high. One of my best friends had a cookie festival yesterday and I will not need to be baking for a while.
But I wrote down your ricotta cookie recipe and will give it a try -- next week, or in the New Year. :) By the way, you forgot the ricotta cheese when you typed it up. Good thing that iPad is big enough to read. I see that it says 1 cup! :)

I also LOVE my iPad (using it right now) - i use it often for cooking , I don't use my recipe books very often now, I use mostly the one line recipes. Just need to buy a stand so my iPad doesn't get covered in flour like I did the other day!!
Blessings this Christmas Day. Tody for me is Boxing Day and I am recovering for all the activities of yesterday and I certainly wont be eating as much today!
