Mango Bread (favorite recipe)

I made this sweet bread a couple week ends ago and took it with us on our trip to the Springfield flea market. Thought that it would last us for the 2 day trip - not! Didn't even make it past lunch on the first day! AND - the three of us got into a fight over the last piece!! Yep - it's that good~~~


Mango Bread
~~
3/4 cup vegetable oil
2 1/2 cups chopped mangoes
(I use the Del Monte mangoes in the jar
because they are always so fresh and juicy)

2 tsp lemon juice
1/2 cup golden raisins
(going to be honest here - I use way more! I usually use almost a whole cup)

2 cups flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 cup sugar
1/4 cup brown sugar
2 eggs
2 tsp vanilla

Beat eggs,oil, and sugar. Mix in spices, vanilla, and lemon juice. Alternately add flour, mixing until well blended. (Mixture will be thick - I usually do this by hand.)
Add raisins and well drained mangoes. Pour into loaf pan and bake at 350 degrees for 1 hour.

For me - this recipe seems to make enough for the one loaf pan and for about 2 muffins which I bake in little pudding cups - (I think this is because I add the extra raisins - oh well!)

I am sure that using fresh mangoes is probably just as good - I am just hooked on the ones in the jar!

We are just back from our trip to Asheville, Black Mountain, the Biltmore, and lots more! (The rose garden at the Biltmore was stunning!) (My nests look adorable in their new home!) (We found some wonderful new places in Asheville!) (And - we attended the most charming Repertory Theater in Mars Hill!)

We went non stop for 3 days and I have lots of pictures and stories to share with you. Just need a few days to process it all (and I do have a job you know - so have to find time to work also!)

Ohhhhhh sounds wonderful! Next time I don an apron, I'll have to try this!!!
You often say you don't know how I have so much energy....well living alone and only cooking once a week for son Andrew leaves a lot of time for crafting!
I LOVE to cook/bake,,,but don't for just me. Unless I have guests I keep it simple!!!

Hope you are getting a bit of extra time off to enjoy the long weekend. I've been working and will tomorrow, but just as well as it is so SOGGY here there isn't much going on out of doors!!!

As I don't like mango, do you think pineapple would be OK as a substitute? I even lived in the tropics for 14 years but never grew to like this particular tropical fruit.

Mangoes are very popular on this side of the world. My husband just came home with a big carton of them yesterday and between him and my youngest son, they are half gone. Only mangoes I would find in a jar would be Indian mango chutny. Mmmm -- wonder what that would taste like??? While I have mangoes on hand, might have to give this recipe a try. You know, I've never even had a mango, but I bet I would love that bread, it looks quite good. I must look into that! I also can relate to adding a little bit more of my favorite ingredient to a recipe. ~Lili

Mmmmmm, mangos are my favorite fruit!!! Sounds delicious!!! Have you ever been to the Ringling museum in Sarasota? The rose garden there is beautiful! It photographs well!!! You should come over....
